Native Chia Pudding

Another beautiful creation that is super simple and super easy. For an extra dose of vitamin C be sure to add an extra sprinkle of Kakadu Plum Powder on top. Delicious.!! Enjoy!

Serves 4

 1 cup coconut milk 

½ cup chia seeds 

½ cup macadamias, chopped and lightly toasted 

¼ cup coconut yoghurt – plus a little extra for topping 

1 tbsp chilled canned coconut milk – the thick part from the top 

1 tbsp Kakadu Plum Co Lemon Myrtle with Kakadu Plum 

Pinch of Celtic Salt 

Pinch of vanilla powder 

Seasonal fruit and riberries for topping 

Lime leaves 

Maple Syrup for drizzling 

Mix together coconut milk, chia seeds, coconut yoghurt and thick coconut milk in a bowl with the vanilla and salt until combined, leave in the fridge for a few hours or overnight to thicken 

Divide the pudding into bowls and drizzle over a little coconut yoghurt, maple syrup to taste, and scatter with chopped fruit or berries, macadamia nuts and mint leaves
